Ingredients:

  • For the Cookie Base:
    • 1 cup unsalted butter, softened
    • 3/4 cup sugar
    • 3/4 cup brown sugar, packed
    • 1 teaspoon vanilla extract
    • 2 large eggs
    • 2 1/4 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
  • For the Chocolate Layer:
    • 1 1/2 cups milk chocolate chips
  • For the Caramel Layer:
    • 1 cup caramel bits or soft caramel candies
    • 2 tablespoons cream
  • For Topping:
    • Crushed peanuts
    • Sea salt (optional)

Instructions:

  1. Prepare the Cookies:
    • Preheat your oven to 375°F (190°C).
    • Cream together butter, sugar, brown sugar, and vanilla until light and fluffy.
    • Beat in eggs one at a time.
    • In another bowl, combine flour, baking soda, and salt. Gradually add to the creamed mixture and mix well.
    • Drop by rounded tablespoonfuls onto ungreased baking sheets.
    • Bake for 8-10 minutes until golden brown. Let cool on wire racks.
  2. Add Chocolate Layer:
    • Once cookies are cool, melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
    • Spread a thin layer of melted chocolate over each cookie. Allow to set slightly.
  3. Prepare Caramel Layer:
    • In a small saucepan, melt caramel bits with cream over low heat until smooth.
    • Drizzle or spread a layer of caramel over the set chocolate.
  4. Add Toppings:
    • Sprinkle crushed peanuts over the caramel while it’s still warm.
    • If desired, a light sprinkle of sea salt can be added for a salty-sweet finish.
  5. Set the Layers:
    • Allow the chocolate and caramel to fully set before serving, which might take a couple of hours at room temperature, or you can hasten the process in the refrigerator.
