“Decadent Triple-Layer Caramel Peanut Cookies”
Ingredients:
- For the Cookie Base:
- 1 cup unsalted butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar, packed

- 2 large eggs

Instructions:
- Prepare the Cookies:
- Preheat your oven to 375°F (190°C).
- Cream together butter, sugar, brown sugar, and vanilla until light and fluffy.
- Beat in eggs one at a time.
- In another bowl, combine flour, baking soda, and salt. Gradually add to the creamed mixture and mix well.
- Drop by rounded tablespoonfuls onto ungreased baking sheets.
- Bake for 8-10 minutes until golden brown. Let cool on wire racks.
- Add Chocolate Layer:
- Once cookies are cool, melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Spread a thin layer of melted chocolate over each cookie. Allow to set slightly.
- Prepare Caramel Layer:
- In a small saucepan, melt caramel bits with cream over low heat until smooth.
- Drizzle or spread a layer of caramel over the set chocolate.
- Add Toppings:
- Sprinkle crushed peanuts over the caramel while it’s still warm.
- If desired, a light sprinkle of sea salt can be added for a salty-sweet finish.
- Set the Layers:
- Allow the chocolate and caramel to fully set before serving, which might take a couple of hours at room temperature, or you can hasten the process in the refrigerator.
