Savory Waffles with Bacon, Hash Browns, and Poached Eggs

 

 

 

Ingredients:

  • For the Waffles:
    • 1 ½ cups all-purpose flour
    • 1 tbsp baking powder
    • ½ tsp salt
    • 1 tbsp sugar
    • 1 ¼ cups milk
    • 2 large eggs
    • ¼ cup melted butter
    • 1 tsp vanilla extract (optional)
  • For the Toppings:
    • 4 large eggs (for poaching)
    • 1 cup shredded hash browns
    • 6 strips of cooked bacon, crumbled
    • Fresh parsley or chives for garnish
    • Salt and pepper to taste

Instructions:

  1. Prepare the Waffle Batter:
    • In a large bowl, whisk together the flour, baking powder, salt, and sugar.
    • In another bowl, whisk the milk, eggs, melted butter, and vanilla extract until combined.
    • Pour the wet ingredients into the dry ingredients and whisk until smooth.
  2. Cook the Waffles:
    • Preheat your waffle maker and grease it lightly with non-stick spray or butter.
    • Pour the batter into the waffle maker and cook according to the manufacturer’s instructions until golden brown and crispy. Set aside.
  3. Cook the Hash Browns:
    • In a pan, cook the shredded hash browns over medium heat with a little oil until golden and crispy. Set aside.
  4. Poach the Eggs:
    • Bring a medium pot of water to a simmer and add a splash of vinegar. Crack each egg into a small bowl and gently slide them into the simmering water.
    • Poach the eggs for about 3–4 minutes, or until the whites are set and the yolks are still runny. Remove the eggs with a slotted spoon.
  5. Assemble the Waffle Dish:
    • Place a waffle on a plate, top it with crispy hash browns, and sprinkle the crumbled bacon over the top.
    • Gently place the poached egg on top of the waffle, season with salt and pepper, and garnish with fresh parsley or chives.
  6. Serve:
    • Serve immediately while the waffles are warm and the eggs are perfectly poached.
