Ingredients:

  • 1 cup pitted Medjool dates
  • 1 cup walnuts, chopped
  • 1 ½ cups rolled oats
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (optional)
  • 1 tbsp coconut oil or melted butter (optional, for richness)
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Process the Dates and Walnuts:
    • In a food processor, pulse the dates until they form a thick paste.
    • Add the chopped walnuts and oats to the processor and pulse until combined.
  3. Add Flavorings:
    • Add honey or maple syrup, vanilla extract, cinnamon, and coconut oil (if using) to the mixture. Pulse a few times until everything is evenly combined.
  4. Form the Cookies:
    • Scoop out the dough and shape it into small cookies (about 2 tablespoons of mixture per cookie).
    • Flatten the cookies slightly with your hand or the back of a spoon.
  5. Bake:
    • Place the cookies on the prepared baking sheet and bake for 10–12 minutes, or until the cookies are firm and slightly golden around the edges.
  6. Cool and Serve:
    • Remove the cookies from the oven and let them cool completely.
    • Dust with powdered sugar if desired before serving.
