Hearty Vegetable Soup
Ingredients:

- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 large potato, peeled and diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh chives, chopped
- 1 bay leaf
Optional:
- 1 cup cooked chicken, shredded (for a non-vegetarian option)
- 1/2 cup cooked rice or pasta (for added heartiness)
Instructions:
- Sauté the Vegetables:
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the Remaining Vegetables:
- Stir in the diced potato, red bell pepper, zucchini, cherry tomatoes, and green beans. Cook for another 5 minutes, stirring occasionally.
- Add the Broth and Seasonings:
- Pour in the vegetable broth and add the dried thyme, dried oregano, and bay leaf.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes, or until all the vegetables are tender.
- Season and Finish:
- Remove the bay leaf and discard it.
- Season the soup with salt and pepper to taste.
- Stir in the fresh parsley and chives.
- If you’re adding cooked chicken or rice/pasta, stir them in now and let the soup heat through for another 2-3 minutes.
- Serve:
- Ladle the hot vegetable soup into bowls.
- Garnish with additional fresh herbs if desired.
- Serve with crusty bread or rolls on the side.
