Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 large potato, peeled and diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 bay leaf

Optional:

  • 1 cup cooked chicken, shredded (for a non-vegetarian option)
  • 1/2 cup cooked rice or pasta (for added heartiness)

Instructions:

  1. Sauté the Vegetables:
    • In a large pot, heat the olive oil over medium heat.
    • Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  2. Add the Remaining Vegetables:
    • Stir in the diced potato, red bell pepper, zucchini, cherry tomatoes, and green beans. Cook for another 5 minutes, stirring occasionally.
  3. Add the Broth and Seasonings:
    • Pour in the vegetable broth and add the dried thyme, dried oregano, and bay leaf.
    • Bring the soup to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes, or until all the vegetables are tender.
  4. Season and Finish:
    • Remove the bay leaf and discard it.
    • Season the soup with salt and pepper to taste.
    • Stir in the fresh parsley and chives.
    • If you’re adding cooked chicken or rice/pasta, stir them in now and let the soup heat through for another 2-3 minutes.
  5. Serve:
    • Ladle the hot vegetable soup into bowls.
    • Garnish with additional fresh herbs if desired.
    • Serve with crusty bread or rolls on the side.

Variations:

  • Spice it Up: Add a pinch of red pepper flakes for a bit of heat.
  • Creamy Version: Stir in a splash of cream or coconut milk for a creamy texture.
  • Protein Boost: Add a can of drained and rinsed beans (like chickpeas or cannellini beans) for added protein and heartiness.
