“Hearty Sausage and Bacon Soup”
Ingredients:
- 1 lb smoked sausage, sliced into rounds
- 6 strips of bacon, chopped
- 1 large onion, diced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 3 medium potatoes, peeled and cubed
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions:
- Cook the Bacon and Sausage:
- In a large pot, cook the bacon over medium heat until it is crisp. Remove the bacon and set it aside on a paper towel to drain.
- In the same pot, add the sliced sausage and brown it lightly. Remove the sausage and set aside with the bacon.
- Sauté Vegetables:
- In the remaining bacon fat, add the onion, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Simmer the Soup:
- Return the bacon and sausage to the pot. Add the cubed potatoes, chicken broth, thyme, and parsley.
- Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes, or until the potatoes are tender.
- Season and Serve:
- Season the soup with salt and pepper to taste.
- Garnish with fresh parsley before serving.
