“Hearty Sausage and Bacon Soup”

 

 

Ingredients:

  • 1 lb smoked sausage, sliced into rounds
  • 6 strips of bacon, chopped
  • 1 large onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions:

  1. Cook the Bacon and Sausage:
    • In a large pot, cook the bacon over medium heat until it is crisp. Remove the bacon and set it aside on a paper towel to drain.
    • In the same pot, add the sliced sausage and brown it lightly. Remove the sausage and set aside with the bacon.
  2. Sauté Vegetables:
    • In the remaining bacon fat, add the onion, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  3. Simmer the Soup:
    • Return the bacon and sausage to the pot. Add the cubed potatoes, chicken broth, thyme, and parsley.
    • Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes, or until the potatoes are tender.
  4. Season and Serve:
    • Season the soup with salt and pepper to taste.
    • Garnish with fresh parsley before serving.
