Ingredients:

For the Tofu:

  • 1 block (14 oz) firm tofu, drained and pressed
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon vegetable oil (for frying)

For the Broth:

  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 2 tablespoons miso paste (white or red)
  • 1 tablespoon sesame oil
  • 1 tablespoon chili paste (optional, for heat)
  • 1 tablespoon grated ginger
  • 3 cloves garlic, minced
  • 1 can (14 oz) coconut milk (optional, for creaminess)

For the Ramen:

  • 4 servings of ramen noodles (fresh or dried)
  • 2 green onions, sliced
  • Sesame seeds (for garnish)

Optional Toppings:

  • Baby spinach
  • Bok choy
  • Mushrooms
  • Corn
  • Nori (seaweed)

Instructions:

  1. Prepare the Tofu:
    • Cut the pressed tofu into bite-sized cubes.
    • In a bowl, toss the tofu cubes with soy sauce, sesame oil, garlic powder, onion powder, and cornstarch until evenly coated.
    • Heat vegetable oil in a large skillet over medium-high heat.
    • Fry the tofu cubes until they are golden brown and crispy on all sides. Remove from the skillet and set aside.
  2. Make the Broth:
    • In a large pot, heat sesame oil over medium heat.
    • Add the minced garlic and grated ginger, and sauté until fragrant, about 1-2 minutes.
    • Stir in the vegetable broth, soy sauce, miso paste, and chili paste (if using).
    • Add the coconut milk if you prefer a creamy broth.
    • Bring the broth to a simmer and let it cook for about 10-15 minutes to develop the flavors.
  3. Cook the Ramen:
    • While the broth is simmering, cook the ramen noodles according to package instructions. Drain and set aside.
  4. Assemble the Ramen Bowls:
    • Divide the cooked noodles among four bowls.
    • Pour the hot broth over the noodles.
    • Top with crispy tofu, sliced green onions, and sesame seeds.
    • Add any additional toppings you like, such as spinach, bok choy, mushrooms, corn, or nori.
  5. Serve:
    • Serve the ramen hot, garnished with extra sesame seeds and a drizzle of sesame oil if desired.

Tips:

  • To add extra flavor to the tofu, marinate it in the soy sauce mixture for 15-20 minutes before frying.
  • You can customize the broth by adjusting the amount of miso paste, soy sauce, or chili paste to your taste.
  • For a gluten-free option, use gluten-free ramen noodles and tamari instead of soy sauce.
