Spicy Mutton Curry Recipe
Ingredients:

- 1 lb (450g) mutton or lamb, cut into bite-sized pieces
- 2 large onions, finely chopped
- 2 tomatoes, finely chopped
- 3-4 cloves garlic, minced
- 1-inch piece ginger, minced
- 2-3 green chilies, slit lengthwise (adjust to taste)
- 1/2 cup yogurt
- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 2 bay leaves
- 1-inch cinnamon stick
- 3-4 cloves
- 2-3 green cardamom pods
- 1 teaspoon turmeric powder
- 1 tablespoon red chili powder (adjust to taste)
- 1 tablespoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro, chopped, for garnish
- Sliced red onions and lemon wedges for garnish
Instructions:
- Marinate the Mutton:
- In a large bowl, mix the mutton pieces with yogurt, turmeric powder, red chili powder, and a pinch of salt. Marinate for at least 30 minutes, preferably 1-2 hours.
- Sauté the Whole Spices:
- Heat oil or ghee in a large pot over medium heat. Add cumin seeds, mustard seeds, bay leaves, cinnamon stick, cloves, and cardamom pods. Sauté for a minute until fragrant.
- Cook the Onions:
- Add the finely chopped onions to the pot and sauté until they turn golden brown. This may take about 10-12 minutes.
- Add Ginger, Garlic, and Green Chilies:
- Add the minced ginger, garlic, and slit green chilies. Sauté for another 2-3 minutes until the raw smell disappears.
- Cook the Tomatoes:
- Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture. This can take around 7-8 minutes.
- Add the Spices:
- Add the coriander powder, garam masala, and a little more red chili powder if you want extra heat. Stir well to combine.
- Cook the Mutton:
- Add the marinated mutton pieces to the pot. Cook on medium-high heat, stirring frequently, until the mutton is browned on all sides.
- Add Water and Simmer:
- Add enough water to cover the mutton. Bring it to a boil, then reduce the heat to low. Cover and simmer for 45 minutes to an hour, or until the mutton is tender and cooked through. Stir occasionally and add more water if needed to maintain a good consistency.
- Finish the Curry:
- Once the mutton is tender, check the seasoning and adjust salt if needed. You can also add a little more garam masala at this stage for extra flavor.
- Let the curry simmer uncovered for a few more minutes to thicken the sauce if necessary.
- Garnish and Serve:
- Garnish the mutton curry with fresh cilantro, sliced red onions, and lemon wedges.
- Serve hot with steamed rice, naan, or roti.
