Cheesy Zucchini and Carrot Casserole

 

 

 

Ingredients:

  • 2 medium zucchinis, shredded
  • 2 medium carrots, shredded
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 1/2 cup grated Parmesan cheese
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs (optional)
  • 1/4 cup olive oil or melted butter

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
    • Grease a 9×9-inch baking dish or similar-sized casserole dish.
  2. Prepare the Vegetables:
    • Shred the zucchini and carrots using a box grater or a food processor.
    • Place the shredded zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible. This will help prevent the casserole from becoming too watery.
  3. Mix the Ingredients:
    • In a large mixing bowl, combine the shredded zucchini, shredded carrots, chopped onion, and minced garlic.
    • Add the eggs, flour, baking powder, salt, pepper, Italian herbs (if using), and olive oil or melted butter. Mix well to combine.
    • Stir in the mozzarella cheese and Parmesan cheese until evenly distributed throughout the mixture.
  4. Assemble the Casserole:
    • Pour the vegetable mixture into the prepared baking dish, spreading it out evenly.
    • Sprinkle additional shredded mozzarella cheese over the top to create a cheesy crust.
  5. Bake the Casserole:
    • Place the casserole in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the casserole is set in the middle.
    • If the top is browning too quickly, you can cover it with foil for the last 10 minutes of baking.
  6. Cool and Serve:
    • Remove the casserole from the oven and allow it to cool for about 10 minutes before slicing.
    • Serve warm, garnished with fresh herbs if desired.

Tips:

  • You can add other vegetables to this casserole, such as bell peppers or mushrooms, for added flavor and texture.
  • If you prefer a creamier casserole, you can mix in 1/2 cup of sour cream or Greek yogurt with the egg mixture.
