2. **Prepare the Muffin Batter:**
– In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt, cinnamon, and nutmeg.
– In another bowl, mix the mashed bananas, brown sugar, melted butter, Greek yogurt, egg, and vanilla extract until smooth and well combined.
– Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix. If you’re adding chopped nuts or fruit, fold them into the batter now.
3. **Prepare the Oat Topping:**
– In a small bowl, mix together the oats, brown sugar, melted butter, and nuts (if using) until crumbly.
4. **Fill the Muffin Tin:**
– Divide the muffin batter evenly among the muffin cups, filling each about 2/3 full. Sprinkle the oat topping over each muffin.
5. **Bake:**
– Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
6. **Cool and Serve:**
– Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
