– 2 garlic cloves, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 1 bell pepper, diced
– 2 potatoes, peeled and diced
– 1 zucchini, diced
– 4 cups vegetable broth or chicken broth
– 1 cup heavy cream or half-and-half
– 1 tsp dried thyme
– 1 tsp dried basil
– Salt and pepper, to taste
– Fresh parsley or cilantro, chopped (for garnish)

**Instructions:**

1. **Sauté the Vegetables:**
– In a large pot, heat the olive oil or butter over medium heat.
