Ingredients:

– 1 pound (450g) chicken breast or thighs, sliced into thin strips
– 2 tablespoons olive oil
– Juice of 1 lime

– 1 teaspoon chili powder

**For the Fajitas:**
– 1 red bell pepper, sliced into thin strips
– 1 yellow bell pepper, sliced into thin strips
– 1 green bell pepper, sliced into thin strips
– 1 large onion, sliced into thin rings
– 1 tablespoon olive oil
– Fresh cilantro, chopped (for garnish)
– Tortillas (flour or corn, for serving)
– Optional toppings: sour cream, guacamole, salsa, shredded cheese, lime wedges
Instructions:
1. **Marinate the Chicken:**
– In a large bowl, combine the olive oil, lime juice, minced garlic, chili powder, ground cumin, smoked paprika, oregano, salt, and pepper.
– Add the sliced chicken to the marinade, toss to coat, and let it marinate for at least 30 minutes, or up to 2 hours for more flavor.
2. **Cook the Chicken:**
– Heat a large skillet or grill pan over medium-high heat. Once hot, add the marinated chicken strips.
– Cook the chicken for about 5-7 minutes, stirring occasionally, until it’s cooked through and has a nice sear. Remove the chicken from the pan and set aside.

3. **Cook the Vegetables:**
– In the same skillet, add a tablespoon of olive oil if needed, and then add the sliced bell peppers and onions.
– Sauté the vegetables over medium-high heat for about 5-7 minutes, until they are tender and slightly charred.
4. **Combine and Serve:**
– Once the vegetables are cooked, return the chicken to the skillet and toss everything together until well combined.
– Warm the tortillas in a dry skillet or in the microwave.
– Serve the chicken and vegetables in the tortillas, and top with fresh cilantro and any additional toppings you like.
