“Cheesy Baked Stuffed Bell Peppers”
Ingredients:*
– 4 large bell peppers (any color)
– 1 pound ground beef or turkey
– 1 cup cooked rice
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 can (14.5 oz) diced tomatoes, drained
– 1 cup shredded cheese (mozzarella, cheddar, or your choice)
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
– Fresh parsley for garnish

Instructions:
1. **Prepare the Peppers**:
– Preheat your oven to 375°F (190°C).
– Cut the tops off the bell peppers and remove the seeds and membranes.
– Place the peppers in a baking dish, cut side up.
2. **Cook the Filling**:
– In a large skillet over medium heat, cook the ground beef (or turkey) until browned. Drain any excess fat.
– Add the diced onion and garlic to the skillet and sauté until softened, about 5 minutes.
– Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Cook for a few more minutes until everything is well combined.
3. **Stuff the Peppers**:
– Spoon the meat and rice mixture into each bell pepper, filling them generously.
– Top each stuffed pepper with a generous amount of shredded cheese.
4. **Bake**:
– Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
– After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
