Classic Gazpacho
Ingredients:
- 1 cup diced red bell peppers
- 1 cup diced onions
- 1 cup diced green bell peppers
- 4 ripe tomatoes, diced
- 1 cucumber, peeled and diced
- 2 cloves garlic, minced
- 3 cups tomato juice
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the diced tomatoes, cucumber, red bell peppers, green bell peppers, and onions.
- Add the minced garlic, tomato juice, olive oil, and red wine vinegar.
- Season with salt and pepper, and mix well.
- Refrigerate the soup for at least 2 hours to let the flavors meld.
- Serve cold, garnished with additional diced vegetables or croutons if desired.
