**Ingredients:**

 

**For the Filling:**
– 1 lb (450g) crab meat (or imitation crab meat), shredded
– 1/4 cup mayonnaise
– 1 tablespoon lemon juice
– 1 tablespoon Dijon mustard
– 1/2 teaspoon Old Bay seasoning (optional)
– 1 green onion, finely chopped
– Salt and pepper, to taste

**For the Rolls:**
– 12 spring roll wrappers or egg roll wrappers
– 1 egg, beaten (for sealing)
– Sesame seeds (optional, for garnish)
– Oil for frying

**Instructions:**

 

1. **Prepare the Filling:**
– In a medium bowl, combine the shredded crab meat, mayonnaise, lemon juice, Dijon mustard, Old Bay seasoning, and chopped green onion.
– Mix well until all ingredients are evenly distributed. Season with salt and pepper to taste.
– Set the filling aside.

2. **Assemble the Rolls:**
– Place one spring roll wrapper on a clean, dry surface with one corner pointing towards you (like a diamond shape).
– Spoon about 2 tablespoons of the crab filling onto the lower third of the wrapper.
– Fold the bottom corner over the filling, then fold in the sides, and roll up tightly, brushing the top corner with the beaten egg to seal.
– Sprinkle with sesame seeds if desired.
– Repeat with the remaining wrappers and filling.

3. **Fry the Rolls:**
– In a deep skillet or fryer, heat oil to 350°F (175°C).
– Fry the rolls in batches, turning occasionally, until they are golden brown and crispy, about 3-4 minutes per batch.
– Remove the rolls from the oil and drain on paper towels.

– Serve the crispy crab rolls hot, with dipping sauces like sweet chili sauce, soy sauce, or spicy mayonnaise on the side.
