 Chocolate Cake with Creamy Filling

 

 Ingredients:

**For the Chocolate Cake:**
– 1 3/4 cups all-purpose flour
– 2 cups granulated sugar
– 3/4 cup unsweetened cocoa powder
– 1 1/2 teaspoons baking powder
– 1 1/2 teaspoons baking soda
– 1 teaspoon salt
– 2 large eggs
– 1 cup whole milk
– 1/2 cup vegetable oil
– 2 teaspoons vanilla extract
– 1 cup boiling water

**For the Creamy Filling:**
– 1 cup heavy cream
– 1/4 cup granulated sugar
– 2 tablespoons cornstarch
– 1/2 teaspoon vanilla extract

**For the Chocolate Ganache:**
– 1 cup heavy cream
– 8 ounces semi-sweet chocolate, finely chopped

 Instructions:

**1. Prepare the Cake:**
– Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round baking pans.
– In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
– Add the eggs, milk, oil, and vanilla extract to the flour mixture and beat on medium speed for about 2 minutes.
– Stir in the boiling water (batter will be thin).
– Pour the batter evenly into the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
– Allow the cakes to cool in the pans for about 10 minutes, then remove to wire racks to cool completely.

**2. Make the Creamy Filling:**
– In a medium saucepan, combine the heavy cream, sugar, and cornstarch.
– Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
– Remove from heat and stir in the vanilla extract.
– Allow the filling to cool completely.

**3. Assemble the Cake:**
– Place one layer of the cake on a serving plate.
– Spread the cooled creamy filling over the top.
– Place the second layer of the cake on top of the filling.

**4. Prepare the Ganache:**
– In a small saucepan, heat the heavy cream until it just begins to simmer.
– Place the chopped chocolate in a heatproof bowl.
– Pour the hot cream over the chocolate and let it sit for 2-3 minutes, then stir until smooth.
– Allow the ganache to cool slightly before pouring it over the top of the cake, allowing it to drip down the sides.

– Allow the ganache to set before serving.
