Ingredients:

– 2 1/4 tsp active dry yeast (1 packet)
– 1 cup warm water (110°F or 45°C)
– 2 1/2 cups all-purpose flour
– 1 tsp sugar
– 1 tsp salt
– 2 tbsp olive oil

– 1 cup pizza sauce
– 2 cups shredded mozzarella cheese
– 1/2 cup sliced black olives
– 1/2 cup sliced green olives
– 1/2 cup thinly sliced red onions
– Other desired toppings (e.g., bell peppers, tomatoes, mushrooms)
Instructions:
1. **Prepare the Dough:**
– In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until it becomes frothy.
– In a large bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
– Mix until a dough forms, then turn it out onto a lightly floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic.
– Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
2. **Prepare the Mini Pizzas:**
– Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
– Punch down the risen dough and divide it into 8-10 equal pieces. Roll each piece into a ball, then flatten it into a small disc about 4-5 inches in diameter.
– Place the dough discs on the prepared baking sheet.
3. **Add the Toppings:**
– Spread a spoonful of pizza sauce on each dough disc.
– Sprinkle shredded mozzarella cheese evenly over the sauce.
– Add your desired toppings, such as sliced black olives, green olives, and red onions.
