Elegant ricotta-spinach quiche

 

Ingredients:

1 tart dough (purchased or homemade)
1 tablespoon olive oil
1 small onion, finely chopped
2 cups fresh spinach, chopped
1 cup ricotta cheese
3 large eggs
1 cup heavy
1/2 cup grated Parmesan cheese
Salt and pepper to taste
A piece of hazelnuts

Preparation:

Preheat the oven to 190 °C.
Remove from cake base and press into 21cm cake tin or plate. Cut the bottom with a knot. First, bake the crust for 8 minutes. Remove from oven.
Heat the olive oil in a pan over medium heat. Add the onion and cook until softened, about 5 minutes. Add the spinach and cook until softened, about 2 minutes.
Mix ricotta cheese, eggs, cream, Parmesan cheese, salt, pepper and hazelnuts in a large bowl until well combined. Stir in cooled spinach-onion mixture.
Pour the filling into the prepared containers. Bake for 35-40 minutes or until the quiche is cooked through and the top is golden brown.
Let the quiche cool for a few minutes before cutting. Serve warm or at room temperature.
