Spicy Sichuan-Style Wontons
**Ingredients:**
**For the Wontons:**
– 1/2 pound ground pork
– 1/4 cup finely chopped green onions
– 2 cloves garlic, minced
– 1 tablespoon soy sauce
– 1 tablespoon sesame oil
– 1 teaspoon grated ginger
– 1/2 teaspoon white pepper
– 30-40 wonton wrappers
– Water (for sealing wontons)

– 3 tablespoons soy sauce
– 2 tablespoons chili oil
– 1 tablespoon rice vinegar
– 1 tablespoon sesame oil
– 1 tablespoon sugar
– 1 clove garlic, minced
– 1 tablespoon finely chopped green onions
– 1/2 teaspoon crushed red pepper flakes (optional, for extra heat)
**Garnish:**
– Chopped fresh cilantro
– Sesame seeds
**Instructions:**
1. **Make the Wontons:**
– In a bowl, combine the ground pork, chopped green onions, minced garlic, soy sauce, sesame oil, grated ginger, and white pepper. Mix well until all ingredients are thoroughly combined.
2. **Assemble the Wontons:**
– Place a wonton wrapper on a clean surface. Spoon about 1 teaspoon of the filling into the center of the wrapper. Moisten the edges of the wrapper with water, fold it over to form a triangle, and press to seal the edges. Bring the two bottom corners together and seal with a dab of water. Repeat with remaining wrappers and filling.

3. **Cook the Wontons:**
– Bring a large pot of water to a boil. Add the wontons and cook for 3-4 minutes, or until they float to the top and are fully cooked. Remove with a slotted spoon and drain.
4. **Prepare the Spicy Sauce:**
– In a bowl, combine the soy sauce, chili oil, rice vinegar, sesame oil, sugar, minced garlic, chopped green onions, and crushed red pepper flakes (if using). Mix well until the sugar is dissolved.
5. **Toss the Wontons in Sauce:**
– Place the cooked wontons in a serving bowl. Pour the spicy sauce over the wontons and toss gently to coat.
6. **Garnish and Serve:**
– Garnish with chopped fresh cilantro and sesame seeds. Serve immediately while hot.
