Hearty Vegetable and Chicken Soup Recipe

Ingredients:
– 2 tablespoons olive oil
– 1 large onion, chopped
– 3 cloves garlic, minced
– 3 large carrots, sliced
– 2 celery stalks, sliced
– 2 potatoes, peeled and diced
– 1 can (14.5 ounces) diced tomatoes
– 6 cups chicken broth
– 2 cups cooked chicken, shredded or diced
– 1 teaspoon dried thyme
– 1 teaspoon dried oregano
– 1 bay leaf
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Instructions:
1. **Sauté Onion and Garlic:**
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent. Add the minced garlic and cook for another minute.
2. **Add Vegetables:**
Add the sliced carrots, celery, and diced potatoes to the pot. Cook for about 5 minutes, stirring occasionally.

3. **Add Broth and Tomatoes:**
Pour in the chicken broth and add the diced tomatoes (with their juice). Stir to combine.
4. **Add Seasoning and Chicken:**
Stir in the dried thyme, dried oregano, and bay leaf. Add the shredded or diced chicken. Season with salt and pepper to taste.
5. **Simmer:**
Bring the soup to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the vegetables are tender.
6. **Serve:**
Remove the bay leaf and discard it. Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot.
