Ingredients:

– **For the dough:**
– 2 1/4 teaspoons active dry yeast
– 1 cup warm water (110°F)
– 2 1/2 cups all-purpose flour
– 1 teaspoon salt
– 1 tablespoon olive oil

– **For the topping:**
– 2 cups shredded mozzarella cheese
– 2-3 large tomatoes, thinly sliced
– 1/4 cup grated Parmesan cheese
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– Fresh basil or parsley, chopped
– Salt and pepper to taste

1. **Prepare the dough:**
– In a small bowl, dissolve the yeast in warm water. Let it sit for about 5 minutes until it becomes frothy.
– In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
– Mix until a dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.
– Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

2. **Preheat Oven:**
– Preheat your oven to 450°F (230°C). Place a baking sheet or pizza stone in the oven to preheat.

3. **Prepare the topping:**
– In a small bowl, combine the olive oil and minced garlic.
– Once the dough has risen, punch it down and roll it out on a lightly floured surface to your desired thickness.
– Brush the rolled-out dough with the garlic-infused olive oil.
– Evenly distribute the shredded mozzarella cheese over the dough.
– Arrange the tomato slices on top of the cheese.
– Sprinkle the grated Parmesan cheese over the tomatoes.
– Season with salt and pepper to taste.

4. **Bake:**
– Carefully transfer the prepared flatbread to the preheated baking sheet or pizza stone.
– Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly and lightly browned.

5. **Garnish and Serve:**
– Remove from the oven and sprinkle with chopped fresh basil or parsley.
– Let it cool slightly before cutting into squares or triangles.
