2. **Make the Dry Rub**:
– In a bowl, combine the brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, cayenne pepper, and mustard powder. Mix well.

3. **Season the Ribs**:
– Generously rub the spice mixture all over the ribs, covering both sides.
– Place the ribs on a baking sheet lined with aluminum foil. If needed, cut the racks in half to fit the baking sheet.

4. **Cook the Ribs**:
– Pour the apple cider vinegar around the ribs and cover the baking sheet tightly with aluminum foil.
– Bake in the preheated oven for 2.5 to 3 hours, or until the meat is tender and pulls away from the bone easily.

5. **Glaze the Ribs (Optional)**:
– If you like a sticky glaze, remove the foil and brush the ribs with barbecue sauce.
– Increase the oven temperature to 400°F (200°C) and return the ribs to the oven for an additional 10-15 minutes, or until the sauce is caramelized.

6. **Serve**:
– Remove the ribs from the oven and let them rest for a few minutes before cutting.
– Serve with extra barbecue sauce on the side, if desired.
