Ingredients:

  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes (oil-packed), drained and sliced
  • 1 cup fresh spinach
  • 1 lb potato gnocchi
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Sear the Chicken: In a large pot or Dutch oven, heat olive oil over medium heat. Add diced chicken breast, season with salt and pepper, and cook until it’s browned and cooked through. Remove the chicken and set aside.
  2. Sauté the Aromatics: In the same pot, add the chopped onion and sauté for 2-3 minutes until softened. Add minced garlic and cook for another 1 minute until fragrant.
  3. Add Broth and Cream: Pour in the chicken broth and bring it to a simmer. Then, add the heavy cream and stir well.
  4. Add Sun-Dried Tomatoes and Gnocchi: Stir in the sun-dried tomatoes and potato gnocchi. Let the mixture simmer for about 5 minutes or until the gnocchi is tender.
  5. Incorporate Chicken and Spinach: Return the cooked chicken to the pot and add the fresh spinach. Stir until the spinach wilts, about 1-2 minutes.
  6. Add Parmesan: Stir in the grated Parmesan cheese and let it melt into the soup, thickening it slightly. Adjust seasoning with salt and pepper as needed.
  7. Serve: Ladle the soup into bowls, garnish with fresh basil or parsley if desired, and enjoy warm!
