Ingredients:
For the Cake:
- 1 cup all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 5 large eggs, separated
- 1 cup sugar, divided (¾ cup and ¼ cup)
- 1/3 cup whole milk
- 1 teaspoon vanilla extract
For the Milk Mixture:
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
- 1/4 cup whole milk or heavy cream
For the Whipped Topping:
- 1 ½ cups heavy cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions:
Step 1: Bake the Cake
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat the egg yolks with ¾ cup sugar on high speed until they are pale yellow. Stir in the milk and vanilla extract.
- Gently fold the flour mixture into the egg yolk mixture until combined.
- In a separate bowl, beat the egg whites on high speed until soft peaks form. Gradually add the remaining ¼ cup sugar and continue beating until stiff peaks form.
- Gently fold the egg whites into the batter until just combined.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely.
Step 2: Soak the Cake

- Once the cake has cooled, poke small holes all over the top of the cake using a fork.
- In a large bowl, whisk together the evaporated milk, sweetened condensed milk, and whole milk (or heavy cream).
- Slowly pour the milk mixture evenly over the cake, making sure to cover the entire surface. The cake will absorb the liquid.
- Let the cake soak in the refrigerator for at least 1 hour (or overnight for best results).
Step 3: Make the Whipped Topping
- In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract on high speed until stiff peaks form.
- Spread the whipped cream evenly over the top of the soaked cake.
Step 4: Serve
- Cut the cake into squares and serve chilled. Optionally, you can garnish with a sprinkle of cinnamon, fresh fruit, or grated chocolate.
