Sausage and Potato Stew Recipe
Ingredients:
- 1 lb Italian sausage, crumbled
- 2 medium potatoes, peeled and diced
- 2 carrots, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup milk or cream
- Salt and pepper, to taste
- 1 tsp dried thyme
- 1/2 tsp paprika
- Optional: Chopped celery or bell peppers
Instructions:
- Brown the Sausage: In a large pot, cook the sausage over medium heat until it’s browned and no longer pink. Remove the sausage and set aside.
- Sauté Vegetables: In the same pot, add a little oil if needed. Add onions, garlic, carrots, and optional celery or peppers. Cook until the vegetables are slightly softened, about 5 minutes.
- Simmer: Return the sausage to the pot. Add the diced potatoes, broth, thyme, and paprika. Bring to a boil, then reduce to a simmer. Cover and let cook for about 20 minutes, or until the potatoes and carrots are tender.
- Finish with Cream: Add the milk or cream and heat through. Season with salt and pepper to taste.
- Serve: Serve hot, garnished with fresh herbs if desired.
