Sausage and Potato Stew Recipe

 

 

 

 

Ingredients:

  • 1 lb Italian sausage, crumbled
  • 2 medium potatoes, peeled and diced
  • 2 carrots, peeled and sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream
  • Salt and pepper, to taste
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Optional: Chopped celery or bell peppers

Instructions:

  1. Brown the Sausage: In a large pot, cook the sausage over medium heat until it’s browned and no longer pink. Remove the sausage and set aside.
  2. Sauté Vegetables: In the same pot, add a little oil if needed. Add onions, garlic, carrots, and optional celery or peppers. Cook until the vegetables are slightly softened, about 5 minutes.
  3. Simmer: Return the sausage to the pot. Add the diced potatoes, broth, thyme, and paprika. Bring to a boil, then reduce to a simmer. Cover and let cook for about 20 minutes, or until the potatoes and carrots are tender.
  4. Finish with Cream: Add the milk or cream and heat through. Season with salt and pepper to taste.
  5. Serve: Serve hot, garnished with fresh herbs if desired.
