Ingredients:


For the Soup:
1 pound (450 g) white fish fillets (e.g., cod, tilapia, or snapper), cut into bite-sized pieces
1 tablespoon vegetable oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1-2 green chilies, sliced (adjust to taste)
1 can (14 oz) coconut milk
2 cups fish or chicken broth
1 tablespoon fish sauce
Juice of 2 limes (about 1/4 cup)
Zest of 1 lime
1 tablespoon brown sugar (optional)
1 cup cherry tomatoes, halved
1 cup baby spinach or bok choy
Fresh cilantro or basil, for garnish
Lime wedges, for serving

1. Sauté Aromatics:
Heat Oil: In a large pot, heat the vegetable oil over medium heat.
Cook Aromatics: Add the chopped onion, minced garlic, and minced ginger. Sauté for about 3-4 minutes, or until the onion becomes translucent. Add the sliced green chilies and cook for another minute.
2. Add Liquids:
Combine Ingredients: Pour in the coconut milk and fish or chicken broth. Stir to combine.
Season: Add the fish sauce, lime juice, lime zest, and brown sugar (if using). Bring the mixture to a simmer.
3. Cook the Fish:
Add Fish: Gently add the fish pieces to the pot and let them cook for about 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
4. Add Vegetables:
Incorporate Tomatoes and Greens: Stir in the cherry tomatoes and baby spinach or bok choy. Cook for an additional 2-3 minutes, just until the greens are wilted and the tomatoes are slightly softened.
5. Serve:
Plate the Soup: Ladle the soup into bowls and garnish with fresh cilantro or basil. Serve with lime wedges on the side for squeezing.
Tips:
Spice Level: Adjust the number of green chilies to your preferred spice level. You can also add red pepper flakes for extra heat.
Fish Options: Feel free to use any firm white fish you prefer or even shrimp for a different flavor.
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop.
