Classic Spaghetti Carbonara
- Ingredients:
- 400g spaghetti
- 150g pancetta or bacon
- 2 large eggs
- 50g pecorino cheese, grated
- 50g parmesan, grated
- Freshly ground black pepper
- Salt
- 2 cloves garlic, minced (optional)
- Instructions:
- Cook the spaghetti in salted boiling water according to the package instructions.
- In a frying pan, cook the pancetta or bacon until crispy. Add garlic for extra flavor.
- In a bowl, whisk together the eggs and grated cheeses.
- Once the spaghetti is cooked, drain it and quickly toss it with the pancetta and garlic.
- Remove the pan from the heat and add the egg and cheese mixture. Stir rapidly to create a creamy sauce.
- Season with black pepper and serve with extra cheese on top.
