Raspberry Chocolate Mousse Cake Recipe

 

 

 

Ingredients:

  • For the Chocolate Cake Layer:
    • 1 cup all-purpose flour
    • 1 cup sugar
    • 1/2 cup cocoa powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 cup buttermilk
    • 1/4 cup vegetable oil
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1/2 cup hot water
  • For the Raspberry Mousse:
    • 2 cups fresh raspberries
    • 1/2 cup sugar
    • 1 tablespoon lemon juice
    • 1 1/2 teaspoons gelatin powder
    • 2 tablespoons cold water
    • 1 cup heavy cream
  • For the Chocolate Ganache:
    • 1 cup heavy cream
    • 1 cup dark chocolate chips
  • For Garnish:
    • Fresh raspberries
    • Chocolate shavings

Instructions:

  1. Prepare the Chocolate Cake:
    • Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
    • In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
    • Add buttermilk, vegetable oil, egg, and vanilla. Mix until smooth.
    • Gradually add hot water and stir until well combined (the batter will be thin).
    • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
    • Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  2. Make the Raspberry Mousse:
    • Puree raspberries with sugar and lemon juice. Strain to remove seeds.
    • Sprinkle gelatin over cold water in a small bowl and let stand for 5-10 minutes.
    • Gently heat the raspberry mixture and add softened gelatin, stirring until dissolved.
    • Cool to room temperature. Whip the heavy cream to stiff peaks and fold into the raspberry mixture.
    • Pour mousse over the cooled cake layer in a springform pan (use the same size as the cake). Chill until set, about 3-4 hours.
  3. Prepare the Chocolate Ganache:
    • Heat the cream until just simmering, then pour over chocolate chips. Let sit for a few minutes, then stir until smooth and glossy.
    • Let cool slightly before pouring over the set mousse layer.
  4. Assemble and Garnish:
    • Once the ganache has set slightly, garnish with fresh raspberries and chocolate shavings.
    • Chill the completed cake until ready to serve.
