Raspberry Chocolate Mousse Cake Recipe
Ingredients:
- For the Chocolate Cake Layer:
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup hot water
- For the Raspberry Mousse:
- 2 cups fresh raspberries
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 1/2 teaspoons gelatin powder
- 2 tablespoons cold water
- 1 cup heavy cream
- For the Chocolate Ganache:
- 1 cup heavy cream
- 1 cup dark chocolate chips
- For Garnish:
- Fresh raspberries
- Chocolate shavings
Instructions:
- Prepare the Chocolate Cake:
- Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
- Add buttermilk, vegetable oil, egg, and vanilla. Mix until smooth.
- Gradually add hot water and stir until well combined (the batter will be thin).
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
- Make the Raspberry Mousse:
- Puree raspberries with sugar and lemon juice. Strain to remove seeds.
- Sprinkle gelatin over cold water in a small bowl and let stand for 5-10 minutes.
- Gently heat the raspberry mixture and add softened gelatin, stirring until dissolved.
- Cool to room temperature. Whip the heavy cream to stiff peaks and fold into the raspberry mixture.
- Pour mousse over the cooled cake layer in a springform pan (use the same size as the cake). Chill until set, about 3-4 hours.
- Prepare the Chocolate Ganache:
- Heat the cream until just simmering, then pour over chocolate chips. Let sit for a few minutes, then stir until smooth and glossy.
- Let cool slightly before pouring over the set mousse layer.
- Assemble and Garnish:
- Once the ganache has set slightly, garnish with fresh raspberries and chocolate shavings.
- Chill the completed cake until ready to serve.
