Ingredients:

  • 1 lb spicy Italian sausage, casings removed
  • 4-6 potatoes, chopped into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bunch kale, stems removed and leaves torn into bite-sized pieces
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional, for extra heat)

Instructions:

  1. Cook the Sausage:
    • In a large pot over medium heat, cook the sausage until browned and crumbly. Drain excess fat, set aside some sausage for topping if desired, and leave the rest in the pot.
  2. Sauté Onions and Garlic:
    • Add the chopped onion to the pot with the sausage and cook until the onions are translucent. Add the minced garlic and cook for another minute until fragrant.
  3. Add Potatoes and Broth:
    • Add the chopped potatoes to the pot, then pour in the chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 10-15 minutes.
  4. Add Kale and Cream:
    • Stir in the kale and cook until it’s wilted and bright green, which should take about 5 minutes.
    • Pour in the heavy cream and stir until the soup is heated through.
  5. Season:
    • Taste and adjust seasoning with salt, pepper, and red pepper flakes if using.
  6. Serve:
    • Ladle the soup into bowls and top with the reserved sausage if desired.
    • Serve hot, ideally with crusty bread for dipping.
