Zuppa Toscana Recipe
Ingredients:
- 1 lb spicy Italian sausage, casings removed
- 4-6 potatoes, chopped into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bunch kale, stems removed and leaves torn into bite-sized pieces
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional, for extra heat)
Instructions:
- Cook the Sausage:
- In a large pot over medium heat, cook the sausage until browned and crumbly. Drain excess fat, set aside some sausage for topping if desired, and leave the rest in the pot.
- Sauté Onions and Garlic:
- Add the chopped onion to the pot with the sausage and cook until the onions are translucent. Add the minced garlic and cook for another minute until fragrant.
- Add Potatoes and Broth:
- Add the chopped potatoes to the pot, then pour in the chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 10-15 minutes.
- Add Kale and Cream:
- Stir in the kale and cook until it’s wilted and bright green, which should take about 5 minutes.
- Pour in the heavy cream and stir until the soup is heated through.
- Season:
- Taste and adjust seasoning with salt, pepper, and red pepper flakes if using.
- Serve:
- Ladle the soup into bowls and top with the reserved sausage if desired.
- Serve hot, ideally with crusty bread for dipping.
