Ingredients:

  • 1 lb ground beef
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup if preferred)
  • 1 cup frozen mixed vegetables (peas, carrots, corn, and green beans work well)
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese (divided)
  • 1 bag (32 oz) frozen tater tots
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain any excess fat.
  3. Add Seasoning: Season the beef with salt, pepper, garlic powder, and onion powder. Stir well.
  4. Prepare the Creamy Mixture: In a mixing bowl, combine the cream of mushroom soup and milk. Stir until smooth, then add it to the skillet with the beef. Stir in half of the shredded cheddar cheese and the frozen vegetables. Mix well.
  5. Assemble the Casserole: Transfer the beef and vegetable mixture to a baking dish (9×13 inch works well). Spread it out evenly. Arrange the frozen tater tots in a single layer over the top of the beef mixture.
  6. Bake the Casserole: Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
  7. Add Cheese: Sprinkle the remaining shredded cheddar cheese over the top of the casserole. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  8. Garnish and Serve: Remove from the oven and garnish with fresh parsley if desired. Let the casserole cool for a few minutes before serving.
