Tiramisu, an Italian
Ingredients:
- 6 large egg yolks
- 3/4 cup granulated sugar
- 1 cup mascarpone cheese
- 1 1/2 cups heavy cream
- 2 cups strong brewed coffee, cooled
- 1/2 cup coffee liqueur (optional)
- 2 packages ladyfingers (about 24 pieces)
- Unsweetened cocoa powder, for dusting
- Dark chocolate shavings (optional), for garnish
Instructions:
- Prepare the Coffee Mixture:
- Combine the brewed coffee with the coffee liqueur in a shallow dish. Set aside to cool.
- Make the Mascarpone Cream:
- In a large bowl, whisk egg yolks and sugar until well blended and creamy.
- Add mascarpone cheese and mix until smooth and well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until uniform.
- Assemble the Tiramisu:
- Quickly dip each ladyfinger into the coffee mixture. Do not soak them too long or they will become too soft.
- Arrange a layer of soaked ladyfingers at the bottom of a rectangular serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of soaked ladyfingers and top with the remaining mascarpone mixture.
- Smooth the top with a spatula.
- Chill:
- Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or overnight, which allows the flavors to meld and the dessert to firm up.
- Serve:
- Just before serving, dust the top generously with unsweetened cocoa powder.
- Optionally, garnish with dark chocolate shavings for extra flair.
Tips:
- Egg Safety: Since this recipe uses raw eggs, it’s important to use fresh, properly refrigerated, clean grade A or AA eggs with intact shells.
- Variations: For an alcohol-free version, omit the coffee liqueur and use only brewed coffee.
This tiramisu recipe makes a decadent dessert that’s perfect for impressing at dinner parties or enjoying as a treat with family and friends. Enjoy your creation!
