Tiramisu, an Italian

Ingredients:

  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1 cup mascarpone cheese
  • 1 1/2 cups heavy cream
  • 2 cups strong brewed coffee, cooled
  • 1/2 cup coffee liqueur (optional)
  • 2 packages ladyfingers (about 24 pieces)
  • Unsweetened cocoa powder, for dusting
  • Dark chocolate shavings (optional), for garnish

Instructions:

  1. Prepare the Coffee Mixture:
    • Combine the brewed coffee with the coffee liqueur in a shallow dish. Set aside to cool.
  2. Make the Mascarpone Cream:
    • In a large bowl, whisk egg yolks and sugar until well blended and creamy.
    • Add mascarpone cheese and mix until smooth and well combined.
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the mascarpone mixture until uniform.
  3. Assemble the Tiramisu:
    • Quickly dip each ladyfinger into the coffee mixture. Do not soak them too long or they will become too soft.
    • Arrange a layer of soaked ladyfingers at the bottom of a rectangular serving dish.
    • Spread half of the mascarpone mixture over the ladyfingers.
    • Repeat with another layer of soaked ladyfingers and top with the remaining mascarpone mixture.
    • Smooth the top with a spatula.
  4. Chill:
    • Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or overnight, which allows the flavors to meld and the dessert to firm up.
  5. Serve:
    • Just before serving, dust the top generously with unsweetened cocoa powder.
    • Optionally, garnish with dark chocolate shavings for extra flair.

Tips:

  • Egg Safety: Since this recipe uses raw eggs, it’s important to use fresh, properly refrigerated, clean grade A or AA eggs with intact shells.
  • Variations: For an alcohol-free version, omit the coffee liqueur and use only brewed coffee.
