Herb-Roasted Baby Potatoes with Bacon

Ingredients:
- 2 lbs baby potatoes, halved (or left whole if small)
- 4-5 slices of bacon, cooked and crumbled
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons paprika
- 1 teaspoon dried thyme (or fresh if available)
- 1 teaspoon dried parsley (or fresh for garnish)
- Salt and black pepper to taste
- Optional: chopped fresh parsley for garnish
Instructions:
- Preheat the oven to 400°F (200°C).
- Prepare the potatoes: Wash and dry the baby potatoes. If they are larger, cut them in half; if they are small, you can leave them whole.
- Season the potatoes: In a large mixing bowl, toss the potatoes with olive oil, garlic powder, paprika, thyme, parsley, salt, and black pepper.
- Roast the potatoes: Spread the seasoned potatoes in a single layer on a baking sheet or in a roasting pan. Roast in the preheated oven for 30-35 minutes, flipping halfway through, until they are crispy and golden brown.
- Add bacon: During the last 5 minutes of roasting, sprinkle the cooked and crumbled bacon over the potatoes and return to the oven.
- Garnish and serve: Once out of the oven, garnish with freshly chopped parsley if desired. Serve immediately while warm.
