**Ingredients:**

– 8 large eggs
– 1/2 cup whole milk or heavy cream
– 1 cup shredded cheese (such as cheddar, mozzarella, or a blend)
– 1 cup bell peppers, diced
– 1/2 cup onions, finely chopped
– 1 cup spinach, chopped
– 1/2 cup cherry tomatoes, halved
– 1/2 cup cooked and crumbled bacon or sausage (optional)
– 2 tablespoons olive oil or butter
– Salt and black pepper to taste
– Fresh herbs (such as parsley or green onions) for garnish

**Instructions:**

1. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C).

2. **Prepare the Veggies:**
– In a large, oven-safe skillet (such as cast iron), heat the olive oil or butter over medium heat.
– Add the onions and bell peppers and sauté until they start to soften, about 5 minutes.
– Add the spinach and cook until wilted, about 2 minutes.
– If using cooked bacon or sausage, add it to the skillet and mix well.
– Add the cherry tomatoes and cook for another 2 minutes. Season the mixture with salt and black pepper.

3. **Prepare the Egg Mixture:**
– In a large bowl, whisk together the eggs and milk or heavy cream until well combined.
– Stir in half of the shredded cheese.

4. **Combine and Cook:**
– Pour the egg mixture over the sautéed vegetables in the skillet. Use a spatula to spread the mixture evenly and ensure the vegetables are well distributed.
– Sprinkle the remaining cheese evenly over the top.

5. **Bake the Frittata:**
– Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the frittata is puffed up, golden brown, and the eggs are set in the center.

6. **Garnish and Serve:**
– Remove the skillet from the oven and let the frittata cool for a few minutes.
– Garnish with fresh herbs before slicing and serving.
