Ingredients:

  • 1 lb ground beef
  • 3 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn kernels, fresh or frozen
  • 1 cup green beans, fresh or frozen
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil

  1. Brown the Beef:
    • In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain any excess fat.
  2. Sauté Vegetables:
    • Add onions, celery, and garlic to the pot with the beef and sauté until the onions are translucent.
  3. Add Liquids and Simmer:
    • Stir in the beef broth, diced tomatoes, oregano, and basil. Bring to a simmer.
  4. Add Remaining Vegetables:
    • Add the carrots, potatoes, corn, and green beans to the pot. Season with salt and pepper.
  5. Cook the Soup:
    • Bring the mixture to a boil, then reduce heat and let it simmer for about 20-30 minutes, or until the vegetables are tender.
  6. Adjust Seasoning:
    • Taste and adjust the seasoning as needed.
  7. Serve:
    • Ladle the soup into bowls and serve hot. Optionally, garnish with chopped parsley or grated cheese if desired.
