Hamburger Soup
Ingredients:
- 1 lb ground beef
- 3 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup corn kernels, fresh or frozen
- 1 cup green beans, fresh or frozen
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil

- Brown the Beef:
- In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain any excess fat.
- Sauté Vegetables:
- Add onions, celery, and garlic to the pot with the beef and sauté until the onions are translucent.
- Add Liquids and Simmer:
- Stir in the beef broth, diced tomatoes, oregano, and basil. Bring to a simmer.
- Add Remaining Vegetables:
- Add the carrots, potatoes, corn, and green beans to the pot. Season with salt and pepper.
- Cook the Soup:
- Bring the mixture to a boil, then reduce heat and let it simmer for about 20-30 minutes, or until the vegetables are tender.
- Adjust Seasoning:
- Taste and adjust the seasoning as needed.
- Serve:
- Ladle the soup into bowls and serve hot. Optionally, garnish with chopped parsley or grated cheese if desired.
