Garlic Parmesan Roasted Potatoes

Ingredients:
- 2 lbs (900 g) baby potatoes or Yukon Gold potatoes (cut into bite-sized cubes)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried thyme (optional)
- Salt and pepper to taste
- 1 teaspoon paprika (optional for extra flavor)
- 1 tablespoon butter (optional, for extra richness)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with olive oil.
2. Prepare the Potatoes:
- If using baby potatoes, cut them in half or quarters depending on their size. For Yukon Gold or other large potatoes, cut them into bite-sized cubes.
3. Season the Potatoes:
- In a large bowl, toss the potatoes with olive oil, minced garlic, Parmesan cheese, salt, pepper, thyme, and paprika (if using).
- Make sure all the potatoes are evenly coated with the seasonings.
4. Roast the Potatoes:
- Spread the seasoned potatoes out in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 25-35 minutes, or until the potatoes are golden brown and crispy on the outside. Flip the potatoes halfway through cooking to ensure they brown evenly.
5. Add Butter (Optional):
- For extra flavor and richness, melt a tablespoon of butter and toss it with the potatoes right after they come out of the oven.
6. Garnish and Serve:
- Remove the potatoes from the oven and sprinkle with fresh parsley.
- Serve immediately while hot, with an extra sprinkle of Parmesan if desired.
