Chicken and Dumplings Recipe
Ingredients:

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth

- 4 medium potatoes, peeled and diced

For the Dumplings:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons butter, melted
Instructions:
- Prepare the Chicken Stew:
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until the onion is soft and translucent, about 5 minutes.
- Add the chicken broth, water, and diced potatoes to the pot. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the shredded chicken, thyme, parsley, black pepper, and salt. If using, add the heavy cream for a creamier broth. Let the stew simmer while you prepare the dumplings.
- Prepare the Dumplings:
- In a medium bowl, combine the flour, baking powder, and salt.
- Stir in the milk and melted butter until just combined. Do not overmix; the dough should be thick and slightly sticky.
- Cook the Dumplings:
- Drop spoonfuls of the dumpling dough into the simmering stew. The dumplings should rest on top of the liquid and may be slightly submerged.
- Cover the pot with a tight-fitting lid and let the dumplings cook for 15 minutes without lifting the lid. This will steam the dumplings and cook them through.
- Serve:
- Once the dumplings are fully cooked, the stew is ready to serve.
- Ladle the chicken and dumplings into bowls and serve hot with crackers or crusty bread on the side.
Tips:
- You can add vegetables like carrots or celery to the stew for additional flavor and texture.
- If you prefer a thicker stew, you can mash a few of the cooked potatoes or add a slurry of cornstarch and water to the broth.
