Ingredients:

For the Chicken Stew:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 4 medium potatoes, peeled and diced
  • 2 cups cooked chicken, shredded (can use a rotisserie chicken for convenience)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 1/2 cup heavy cream (optional, for a creamier broth)

For the Dumplings:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter, melted

Instructions:

  1. Prepare the Chicken Stew:
    • In a large pot or Dutch oven, heat the olive oil over medium heat.
    • Add the chopped onion and garlic, and sauté until the onion is soft and translucent, about 5 minutes.
    • Add the chicken broth, water, and diced potatoes to the pot. Bring to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
    • Stir in the shredded chicken, thyme, parsley, black pepper, and salt. If using, add the heavy cream for a creamier broth. Let the stew simmer while you prepare the dumplings.
  2. Prepare the Dumplings:
    • In a medium bowl, combine the flour, baking powder, and salt.
    • Stir in the milk and melted butter until just combined. Do not overmix; the dough should be thick and slightly sticky.
  3. Cook the Dumplings:
    • Drop spoonfuls of the dumpling dough into the simmering stew. The dumplings should rest on top of the liquid and may be slightly submerged.
    • Cover the pot with a tight-fitting lid and let the dumplings cook for 15 minutes without lifting the lid. This will steam the dumplings and cook them through.
  4. Serve:
    • Once the dumplings are fully cooked, the stew is ready to serve.
    • Ladle the chicken and dumplings into bowls and serve hot with crackers or crusty bread on the side.

Tips:

  • You can add vegetables like carrots or celery to the stew for additional flavor and texture.
  • If you prefer a thicker stew, you can mash a few of the cooked potatoes or add a slurry of cornstarch and water to the broth.
