**Stuffed Chicken Breast

 

 

 

Ingredients:

 

– **Chicken breasts**: 4 large, boneless, skinless
– **Olive oil**: 2 tablespoons
– **Garlic**: 2 cloves, minced
– **Spinach**: 4 cups fresh, chopped
– **Roasted red peppers**: 1/2 cup, diced (you can use jarred or homemade)
– **Mozzarella cheese**: 1 cup, shredded or sliced
– **Cream cheese**: 1/4 cup (optional for extra creaminess)
– **Italian seasoning**: 1 teaspoon
– **Paprika**: 1/2 teaspoon
– **Salt and pepper**: to taste
– **Toothpicks**: for securing the chicken

Instructions:

 

1. **Prepare the Chicken:**
– Preheat your oven to 375°F (190°C).
– Using a sharp knife, carefully cut a pocket into the side of each chicken breast without cutting all the way through.

2. **Make the Filling:**
– In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
– Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
– Remove the skillet from the heat and stir in the roasted red peppers, mozzarella cheese, and cream cheese (if using). Mix until well combined.

3. **Stuff the Chicken:**
– Season the inside of the chicken breasts with a little salt and pepper.
– Stuff each chicken breast with the spinach and cheese mixture. Secure the opening with toothpicks to keep the filling inside.

4. **Season the Chicken:**
– In a small bowl, mix together the Italian seasoning, paprika, salt, and pepper. Rub this seasoning mixture all over the outside of the chicken breasts.

5. **Cook the Chicken:**
– In the same skillet used for the spinach, add the remaining 1 tablespoon of olive oil and heat over medium-high heat.
– Sear the stuffed chicken breasts for about 2-3 minutes on each side until golden brown.
– Transfer the skillet to the preheated oven (or transfer the chicken to a baking dish if your skillet isn’t oven-safe). Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

6. **Serve:**
– Remove the toothpicks before serving.
– Serve the stuffed chicken breasts hot, with your favorite sides like mashed potatoes, steamed vegetables, or a fresh salad.
