**For the Crust:**
– 1 1/2 cups graham cracker crumbs (or crushed digestive biscuits)
– 1/4 cup granulated sugar
– 1/2 cup unsalted butter, melted

**For the Cheesecake Layer:**
– 16 oz (450g) cream cheese, softened
– 1/2 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1/4 cup sour cream
– 1/4 cup strawberry jam or puree

**For the Topping:**
– 1/2 cup white chocolate chips, melted
– 1/2 cup freeze-dried strawberries, crushed
– Optional: fresh strawberries, chopped

**Instructions:**

 

1. **Prepare the Crust:**
– Preheat your oven to 350°F (175°C).
– In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.
– Press the mixture firmly into the bottom of a 9×9 inch (23×23 cm) baking pan lined with parchment paper.
– Bake for 8-10 minutes, until lightly golden. Remove from the oven and let it cool slightly.

2. **Make the Cheesecake Layer:**
– In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
– Add the eggs, one at a time, beating well after each addition.
– Mix in the vanilla extract and sour cream until fully combined.
– Pour the cheesecake mixture over the cooled crust.
– Drop spoonfuls of strawberry jam or puree onto the cheesecake layer and swirl with a toothpick or knife to create a marbled effect.

3. **Bake the Cheesecake Bars:**
– Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
– Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours, or until fully set.

4. **Prepare the Topping:**
– Melt the white chocolate chips in a microwave-safe bowl, stirring every 20 seconds until smooth.
– Drizzle the melted white chocolate over the chilled cheesecake bars.
– Sprinkle the crushed freeze-dried strawberries over the top of the white chocolate, and add any additional fresh strawberries if desired.

5. **Slice and Serve:**
– Once the toppings have set, use a sharp knife to cut the cheesecake into bars.
– Serve chilled and enjoy!
