Butter, Cheese, and Bacon Dry Doritos Chicken

4 boneless, skinless chicken breasts
Salt and pepper to taste
4 ounces cheese, soft
1/2 cup shredded cheddar cheese
4 diced bacon, cooked and crumbled
1 cup crushed Doritos chips
2 eggs, beaten
1 tablespoon olive oil

Preheat the oven to 190°C. Grease the pan with olive oil.
Using a sharp butterfly knife, carefully cut each chicken breast, creating a pocket without cutting through completely.
Sprinkle each chicken breast with salt and pepper.
In a mixing bowl, combine cream cheese, shredded cheddar cheese, and crumbled bacon.
Add the chicken fillets to the cream cheese mixture and press the edges well.
Dip chicken breasts in beaten egg, cover with crushed Doritos chips, and press gently to seal.
Place coated chicken breasts on prepared plate.
Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the lid is golden brown and crispy.
Remove from the oven and let cool for a few minutes before serving.
