Spicy Chicken Stir-Fry with Rice Recipe
Ingredients:

- 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil (for stir-frying)
For the Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon chili garlic sauce (or sriracha for heat)
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/4 cup water
For the Stir-Fry:
- 2 garlic cloves, minced
- 1-inch piece fresh ginger, minced
- 1/2 red bell pepper, chopped
- 1/2 cup green onions, chopped (reserve some for garnish)
- 2-3 dried red chilies, chopped (optional for extra heat)
- 1/4 cup peanuts or cashews (optional)
- Cooked jasmine or basmati rice, for serving
Instructions:
- Marinate the Chicken:
- In a bowl, combine the chicken pieces with soy sauce and cornstarch. Toss to coat evenly and let marinate for at least 10 minutes.
- Prepare the Sauce:
- In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, chili garlic sauce, sesame oil, sugar, and water. Set aside.
- Cook the Chicken:
- Heat the vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry for 4-5 minutes, until browned and cooked through. Remove the chicken from the pan and set aside.
- Stir-Fry the Vegetables:
- In the same pan, add a little more oil if needed. Stir-fry the minced garlic, ginger, and dried red chilies for 1 minute, until fragrant.
- Add the red bell pepper and cook for another 2-3 minutes until tender.
- Combine and Simmer:
- Return the cooked chicken to the pan, along with the sauce mixture. Stir to coat everything evenly and let the sauce simmer for 2-3 minutes until it thickens slightly.
- Add the chopped green onions and peanuts or cashews (if using), and stir to combine.
- Serve:
- Serve the spicy chicken stir-fry over a bed of steamed jasmine or basmati rice.
- Garnish with additional chopped green onions and sliced red chilies for extra heat.
