  • 1 lb (450g) steak (such as sirloin, ribeye, or filet), cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional)
  • 1 tablespoon butter

For the Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon hot sauce (optional, for some heat)

For Topping:

  • 1/4 cup green onions, chopped (for garnish)
  • Optional: shredded cheese, sour cream, bacon bits

Instructions:

  1. Prepare the Baked Potatoes:
    • Preheat your oven to 400°F (200°C).
    • Scrub the potatoes clean and pat them dry. Rub each potato with olive oil and sprinkle with salt.
    • Prick each potato with a fork a few times.
    • Bake the potatoes directly on the oven rack or on a baking sheet for 45-60 minutes, until they are tender when pierced with a fork.
  2. Prepare the Steak Bites:
    • While the potatoes are baking, heat a large skillet over medium-high heat.
    • Season the steak bites with salt, pepper, and paprika (if using).
    • Add olive oil to the skillet, and when hot, add the steak bites in a single layer (you may need to cook in batches to avoid overcrowding).
    • Sear the steak bites for about 2 minutes per side, until browned and cooked to your liking.
    • Add the minced garlic and butter to the skillet during the last minute of cooking, tossing to coat the steak bites in garlic butter.
    • Remove the steak bites from the skillet and set aside.
  3. Make the Sauce:
    • In a small bowl, whisk together mayonnaise, sour cream, Dijon mustard, paprika, garlic powder, onion powder, hot sauce (if using), and salt and pepper.
    • Taste and adjust seasonings as needed.
  4. Assemble the Loaded Baked Potatoes:
    • When the potatoes are done, cut a slit down the middle and fluff the insides with a fork.
    • Add a little butter, salt, and pepper to each potato.
    • Top the baked potatoes with the steak bites, followed by a generous drizzle of the prepared sauce.
    • Garnish with chopped green onions and any additional toppings you like (such as shredded cheese or bacon bits).
  5. Serve:
    • Serve the loaded baked potatoes hot, with extra sauce on the side if desired.

This recipe makes for a hearty and flavorful meal, combining the tenderness of seared steak bites with the fluffiness of baked potatoes and a creamy, tangy sauce. You can also customize the toppings based on your preferences.
