Steak Bites with Loaded Baked Potatoes
Ingredients:
For the Baked Potatoes:
- 4 large russet potatoes
- Olive oil
- Salt and pepper

- 1 lb (450g) steak (such as sirloin, ribeye, or filet), cut into bite-sized cubes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon paprika (optional)
- 1 tablespoon butter
For the Sauce:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon hot sauce (optional, for some heat)
For Topping:
- 1/4 cup green onions, chopped (for garnish)
- Optional: shredded cheese, sour cream, bacon bits
Instructions:
- Prepare the Baked Potatoes:
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes clean and pat them dry. Rub each potato with olive oil and sprinkle with salt.
- Prick each potato with a fork a few times.
- Bake the potatoes directly on the oven rack or on a baking sheet for 45-60 minutes, until they are tender when pierced with a fork.
- Prepare the Steak Bites:
- While the potatoes are baking, heat a large skillet over medium-high heat.
- Season the steak bites with salt, pepper, and paprika (if using).
- Add olive oil to the skillet, and when hot, add the steak bites in a single layer (you may need to cook in batches to avoid overcrowding).
- Sear the steak bites for about 2 minutes per side, until browned and cooked to your liking.

- When the potatoes are done, cut a slit down the middle and fluff the insides with a fork.
- Add a little butter, salt, and pepper to each potato.
