Ingredients:

  • 2 pounds fresh spinach, washed and tough stems removed
  • 2 tablespoons unsalted butter, plus extra for greasing the dishes
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup grated Gruyère cheese (or a similar melty cheese like cheddar)
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Nutmeg, a pinch (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Grease two medium baking dishes with butter.
  2. Prepare the Spinach:
    • Bring a large pot of salted water to a boil. Add the spinach and cook for 2 minutes until wilted. Drain well and, once cool enough to handle, squeeze out as much excess water as possible. Chop roughly and set aside.
  3. Make the Sauce:
    • Melt the butter in a saucepan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
    • Stir in the flour and cook for 1 minute to remove the raw flour taste. Gradually whisk in the cream and milk, and bring to a simmer. Cook until the sauce thickens, about 5 minutes.
    • Remove from heat and stir in half of the Gruyère and Parmesan cheeses. Season with salt, pepper, and a pinch of nutmeg if using.
  4. Combine Spinach and Sauce:
    • In a large mixing bowl, combine the chopped spinach with the cheese sauce. Mix well to ensure the spinach is evenly coated.
  5. Assemble the Dish:
    • Divide the spinach mixture between the prepared baking dishes. Sprinkle the remaining Gruyère and Parmesan cheeses evenly over the top.
  6. Bake:
    • Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.
  7. Serve:
    • Let it cool slightly before serving. This dish can be a perfect side for meats or a hearty main course on its own with some crusty bread.
