Spinach and Cheese Gratin Recipe

Ingredients:
- 2 pounds fresh spinach, washed and tough stems removed
- 2 tablespoons unsalted butter, plus extra for greasing the dishes
- 2 garlic cloves, minced
- 2 tablespoons all-purpose flour
- 1 cup heavy cream
- 1 cup whole milk
- 1 cup grated Gruyère cheese (or a similar melty cheese like cheddar)
- 1/2 cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Nutmeg, a pinch (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Grease two medium baking dishes with butter.
- Prepare the Spinach:
- Bring a large pot of salted water to a boil. Add the spinach and cook for 2 minutes until wilted. Drain well and, once cool enough to handle, squeeze out as much excess water as possible. Chop roughly and set aside.
- Make the Sauce:
- Melt the butter in a saucepan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the flour and cook for 1 minute to remove the raw flour taste. Gradually whisk in the cream and milk, and bring to a simmer. Cook until the sauce thickens, about 5 minutes.
- Remove from heat and stir in half of the Gruyère and Parmesan cheeses. Season with salt, pepper, and a pinch of nutmeg if using.
- Combine Spinach and Sauce:
- In a large mixing bowl, combine the chopped spinach with the cheese sauce. Mix well to ensure the spinach is evenly coated.
- Assemble the Dish:
- Divide the spinach mixture between the prepared baking dishes. Sprinkle the remaining Gruyère and Parmesan cheeses evenly over the top.
- Bake:
- Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.
- Serve:
- Let it cool slightly before serving. This dish can be a perfect side for meats or a hearty main course on its own with some crusty bread.
