Ingredients for Dumplings:

  • 2 cups all-purpose flour
  • 1/2 cup water (adjust as needed)
  • 1/2 teaspoon salt
  • 1 pound ground meat (beef, pork, or lamb)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh herbs (like cilantro or parsley), chopped

  • 1/4 cup olive oil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon minced garlic
  • 1 tablespoon vinegar
  • 1 tablespoon soy sauce
  • Fresh herbs, chopped (for garnish)

Instructions:

  1. Make the Dough:
    • Mix the flour and salt in a bowl. Gradually add water and knead until a smooth, pliable dough forms. Cover and let rest for 30 minutes.
  2. Prepare the Filling:
    • Combine the ground meat, onion, garlic, coriander, cumin, salt, pepper, and fresh herbs in a bowl. Mix well.
  3. Shape the Dumplings:
    • Divide the dough into small balls. On a floured surface, roll each ball into a thin circle.
    • Place a spoonful of the meat filling in the center of each circle. Fold the edges over the filling, pleating to seal the dumpling. Twist to secure the top.
  4. Cook the Dumplings:
    • Bring a large pot of salted water to a boil. Add the dumplings in batches, stirring gently to prevent sticking.
    • Cook for about 10 minutes or until they float to the surface and are cooked through.
  5. Prepare Seasoning Oil:
    • In a small pan, heat the olive oil over low heat. Add the garlic and red pepper flakes, and cook gently without burning.
    • Remove from heat and stir in vinegar and soy sauce.
  6. Serve:
    • Drizzle the seasoned oil over the cooked dumplings.
    • Garnish with chopped fresh herbs.
    • Serve hot.
