SOUP RECIPES
INGREDIENT
2 1/2 pounds pork chops or other ground meat
1 large onion, diced
2 celery, diced
3 cloves garlic, minced
14.5-ounce can tomatoes (I use color)
1 yellow pepper, seeded and diced
1 red pepper, peeled and chopped
1 green pepper, seeded and chopped
4 carrots, peeled and chopped
5 large red potatoes, chopped
3 cups ground beef as needed
3 tablespoons tomato paste
1/2 t kosher salt, more if necessary
1/2 t black pepper
2 t dried parsley
1/2 t ground thyme
1/4 t cayenne pepper (I do not use this)
1. Mix the meat in a large pot. skillet, onion, celery and garlic.
2. Cook the mixture over medium heat until the meat is cooked, removing as much fat as possible.
3. Add the tomatoes, juice, pepper and carrots
4. Stir in the potatoes
5. Add the beef
6. Tomato puree
7. Add the herbs
8. Stir everything together
When the soup has thickened, add another cup or two of salt.
You can also use different types of meat.
When making this, I sometimes leave the meat out of the vegetable soup. I add potatoes, corn, green beans, asparagus and whatever you like. I make a big casserole for this and it freezes well. If you like it, please let me know if you liked it or not. You can also use Turkish soil
