Vegetable and Tofu Noodle Soup

 

 

 

Ingredients:

– 1 tablespoon olive oil
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 2 carrots, sliced
– 2 celery stalks, sliced
– 1 red bell pepper, chopped
– 8 cups vegetable broth
– 1 cup noodles (fettuccine or your preferred type)
– 1 block firm tofu, cut into cubes
– 2 tablespoons soy sauce
– 1 teaspoon ginger, grated
– 1 teaspoon turmeric powder (optional)
– Salt and pepper to taste
– Fresh parsley or cilantro, chopped (for garnish)

Instructions:

 

1. **Prepare Vegetables:**
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are fragrant and the onion is translucent.

2. **Add Vegetables:**
Add the sliced carrots, celery, and chopped red bell pepper to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.

3. **Add Broth and Noodles:**
Pour in the vegetable broth and bring the mixture to a boil. Once boiling, add the noodles and cook according to the package instructions until they are al dente.

4. **Prepare Tofu:**
While the noodles are cooking, prepare the tofu by cutting it into cubes. In a separate pan, lightly brown the tofu cubes on all sides.

5. **Add Tofu and Seasoning:**
Once the noodles are cooked, add the browned tofu cubes to the pot. Stir in the soy sauce, grated ginger, and turmeric powder if using. Season with salt and pepper to taste.

6. **Simmer:**
Let the soup simmer for an additional 5-10 minutes to allow the flavors to meld together.

7. **Garnish and Serve:**
Ladle the soup into bowls and garnish with freshly chopped parsley or cilantro. Serve hot.
