Slow-Cooker Garlic Herb Chicken and Potatoes

 

 

 

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 lb small new potatoes, halved
  • 1/4 cup olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Prepare the Slow Cooker: Place the halved potatoes at the bottom of the slow cooker.
  2. Season the Chicken: In a small bowl, mix the olive oil with minced garlic, oregano, basil, thyme, and parsley. Brush this mixture over the chicken breasts, then season generously with salt and pepper.
  3. Cook: Place the seasoned chicken breasts on top of the potatoes in the slow cooker.
  4. Set the Slow Cooker: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is thoroughly cooked and the potatoes are tender.
  5. Serve: Garnish with fresh parsley before serving.
