Slow-Cooker Garlic Herb Chicken and Potatoes
Ingredients:

- 4 boneless, skinless chicken breasts
- 1 lb small new potatoes, halved
- 1/4 cup olive oil
- 5 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Prepare the Slow Cooker: Place the halved potatoes at the bottom of the slow cooker.
- Season the Chicken: In a small bowl, mix the olive oil with minced garlic, oregano, basil, thyme, and parsley. Brush this mixture over the chicken breasts, then season generously with salt and pepper.
- Cook: Place the seasoned chicken breasts on top of the potatoes in the slow cooker.
- Set the Slow Cooker: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is thoroughly cooked and the potatoes are tender.
- Serve: Garnish with fresh parsley before serving.
