Shrimp Cocktail (Cóctel de Camarones) Recipe
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 cups clamato juice (or tomato juice if clamato is unavailable)
- 1/4 cup ketchup
- 1/4 cup lime juice
- 1 teaspoon hot sauce, or to taste
- 1/2 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup celery, diced
- 1/2 cup fresh cilantro, chopped
- 1 avocado, diced
- Salt and pepper, to taste
- Lime slices and whole jalapeños, for garnish

- Cook Shrimp:
- Bring a pot of salted water to a boil.
- Add the shrimp and cook until they are pink and opaque, about 2-3 minutes.
- Remove from water, cool, and if preferred, cut into bite-sized pieces.
- Mix Sauce:
- In a large bowl, combine clamato juice, ketchup, lime juice, and hot sauce. Stir until well mixed.
- Combine Ingredients:
- Add the cooked shrimp, cucumber, red onion, celery, and cilantro to the sauce.
- Gently mix to ensure everything is evenly coated.
- Season with salt and pepper to taste.
- Chill:
- Refrigerate the cocktail for at least 30 minutes to allow the flavors to meld.
- Serve:
- Right before serving, gently stir in the diced avocado.
- Serve in bowls or glasses, garnished with lime slices and jalapeños.
