Ingredients:

  • 2 lbs potatoes (such as Russet or Yukon Gold), peeled and thinly sliced
  • 1 onion, thinly sliced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk (or a mixture of milk and cream for richness)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional for a bit of color and flavor)
  • 1 cup shredded cheddar cheese (optional for a cheesy version)
  • Fresh parsley, chopped for garnish

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Sauce:
    • In a saucepan over medium heat, melt the butter.
    • Add the flour and stir to form a smooth roux. Cook for about 1 minute to remove the floury taste.
    • Gradually add the milk while whisking constantly to prevent lumps. Cook until the sauce thickens slightly, about 4-5 minutes.
    • Season with salt, pepper, garlic powder, and paprika. Remove from heat.
  3. Layer the Potatoes:
    • In a greased baking dish, arrange a layer of potato slices, followed by a layer of onion slices.
    • Pour some of the sauce over this layer, then repeat the layers until all ingredients are used.
  4. Bake:
    • Cover the dish with aluminum foil and bake in the preheated oven for about 60 minutes.
    • Remove the foil, sprinkle with shredded cheese if using, and bake uncovered for another 20-30 minutes or until the potatoes are tender and the top is golden and bubbly.
  5. Garnish and Serve:
    • Garnish with chopped parsley before serving.

This dish is perfect for a comforting meal and pairs well with a variety of proteins like roasted meats or can be enjoyed on its own as a hearty vegetarian option. Enjoy your cooking!
