- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup pizza sauce or marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- Assorted toppings (e.g., sliced mushrooms, cherry tomatoes, black olives, bell peppers, etc.)
- Fresh basil or parsley for garnish
Instructions:
- Prepare the Eggplant:
- Preheat the oven to 400°F (200°C).
- Slice the eggplants lengthwise into 1/2-inch thick slices.
- Place the eggplant slices on a baking sheet lined with parchment paper.
- Drizzle both sides of the eggplant slices with olive oil and season with paprika, garlic powder, salt, and black pepper.
- Bake the Eggplant:
- Bake the eggplant slices for 15-20 minutes, until they are tender but not mushy. This will help remove excess moisture from the eggplant.

- Remove the baked eggplant slices from the oven.
- Spread a thin layer of pizza or marinara sauce over each slice.
- Sprinkle shredded mozzarella cheese over the sauce.
- Add your preferred pizza toppings (e.g., cherry tomatoes, mushrooms, black olives, bell peppers, etc.).
- Bake Again:
- Return the eggplant pizzas to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Once out of the oven, garnish the eggplant pizzas with fresh basil or parsley.
- Serve immediately and enjoy!
