Roasted Potatoes and Onions
This is delicious. My grandmother was Irish and made this dish all the time. I always remind myself when I do this. I hope you like it 🙂

INGREDIENTS:
. 3-4 large potatoes

. 1 onion, chopped
. frying oil
. green onion garnish
. salt and pepper to taste
INSTRUCTIONS:
Step 1.
Peel the potatoes and cut into thin slices, ⅛”-¼” thick.
Step 2.
Heat the oil in a skillet or shallow pan. Carefully place the potatoes into the hot oil. Stay tuned.
Step 3.
Cook the potatoes for about 20-25 minutes until they are tender. Don’t stir the potatoes quickly, but try to hold them gently so they don’t get air.
Step 4.
Before the potatoes start cooking, add the chopped onion to the potatoes and cook for the last 5 minutes.
Step 5.
Slowly add salt, pepper, and scallion garnish while trying to blend the seasonings, but keep the potatoes as smooth as possible.
Step 6.
Season with green onions, serve with ketchup and enjoy!
