Elegant Raspberry Pistachio Cream Tarts
Ingredients:
1 1/2 cups graham cracker crumbs
1/3 cup sugar
6 tablespoons melted butter
2 cups heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup fresh raspberries
1/2 cup raspberry jam
1/2 cup chopped pistachios
Directions:
Preheat oven to 350°F (175°C).
In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
Press the mixture into the bottoms of tart pans to form the crusts.
Bake the crusts for 10 minutes, then let them cool completely.
In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Spread a thin layer of raspberry jam over the cooled crusts.
Pipe or spoon the whipped cream mixture over the jam layer.
Top each tart with fresh raspberries and sprinkle with chopped pistachios.
Chill the tarts in the refrigerator for at least 1 hour before serving.
